In 1907, if I was Germany, I would have stabbed France. I thought he erred by coming after me, leaving himself vulnerable to France. He had Warsaw, so he could sew up the line any time he wanted to, and France was conveniently taking you out eliminating any possible naval threat to him.
Germany coming south at that point, as you said, gives France a very strong position, which was what played out in the game. I expected Germany to hit France, and not the other way around, that would have given me enough time to mop up Italy and Turkey and set up a chance for a solo on Munich or one of the Iberian centers.
Very odd that another game should play out so similarly to this one - but importantly in that game, you as Austria were in Warsaw in 1907, and Germany had nothing to move on France with, which was not the case in this one.
