I was recently at a fancy cocktail bar on their experimental night. Were you can give the bartender a few flavours to play with, and away he'll go. I had an amazing cocktail with gin, elderflower liqueur, earl grey tea, ginger wine/puree (I'm not sure which) and lemon. It was light floral and extremely refreshing. Early in the night at the same bar I had a cocktail made from Tequilia, Hazelnut Liqueur, Blueberry Wheat ale, Blackberry (they let me finish the beer that didn't make it into the cocktail which was awesome), and another ingredient which I don't remember off the top of my head.
They were both exceptionally good drinks, which I suppose comes as no surprise as the fellow in charge of that bar recently won best bartender in Canada, at a competition in Toronto and is completing internationally in France later this year.
Expensive drinks (though the experimental one was half price) but it was a special occasion, and they were extremely good!
