Aristotle, hands down. Einstein had foundational contributions to our scientific understanding of the world, some of which has been overturned or improved on since, but had quite the impact. Aristotle, on the other hand, more or less grandfathered (or was first quoted as having thought about) a lot of science period. Yes, he's been overturned too. But he also wrote on politics, law, medicine, religion, midwifery(!), dietary stuff, logic, et al.. Let's not forget that he taught alexander the great how to be so great. Schoalstics in the Middle Ages understood that his was a mind to be reckoned with, and brilliant men like Aquinas spent their career trying to harmonize his teaching about the world with the bible. His influence wasn't just in the christian world, but shaped a good deal of the moslem world as well, as they had his texts for longer than the christian west. Agree or disagree with him, he set terms of the conversation in western civilization for centuries to come in a way surpassed by very few. Vote Aristotle.
